Summer Avocado Soup
The weathers warm outside and still fancy something tasty, filling and fresh!
You may have heard of cold soup but have you tried cold Avocado soup?
Serves 7
Ingredients:
5 Avocados
1 Vegetable Stock Cube
A sprinkle of Sage or Cilantro
Couple of Spring of Mint
1 cucumber
250 ml water
Olive Oil
1/2 Lemon
Method:
Boil the Kettle
Add the stock cube and boiled water into a pan to mix in the stock cube. Add your herbs. Set to the side to cool and place in the fridge to cool further until cold.
Remove the Avocado shell and stone, place half in a blender with half of the cucumber chopped. Add half of the cool stock water and mint. Blend! Set aside into a bowl.
Blend the remaining half of the avocados, cucumber and stock water.
Check the consistency of your soup feel free to add more water if you prefer the soup slightly thinner.
Serve in a bowl with a glug of Oliver Oil, Squeeze of Lemon, Salt & Pepper to taste and spring of mint to top.
